Mini Quiche Tray
"The Costco deli sells a tray of 24 mini quiches in lorraine and florentine flavors. Make your own for half the price and serve them hot instead of room-temperature-mystery-warm."

The Game Plan

Preheat oven to 375°F (190°C). Grease a 24-cup mini muffin tin (or work in two batches of 12).

Roll out pie crust and cut into 24 rounds using a 3-inch cutter. Press each round into a muffin cup.

Whisk together eggs, heavy cream, nutmeg, salt, and pepper.

**Lorraine cups:** Place bacon crumbles and cheese in 12 of the crusts. Pour egg mixture to fill 3/4 full.

**Florentine cups:** Place spinach, cheese, and sun-dried tomatoes in the other 12 crusts. Pour egg mixture to fill 3/4 full.

Bake 22-25 minutes until the filling is puffed and set and the crust is golden.

Let cool 5 minutes in the tin, then pop them out.
