The Game Plan
-
Preheat oven to 375°F (190°C). Grease a 9x13 baking dish.
-
In a bowl, mix shredded chicken with sour cream, diced tomatoes, green chiles, cumin, garlic powder, and 1 cup of cheese. Season with salt and pepper.
-
Spread 1/2 cup enchilada sauce on the bottom of the baking dish.
-
Layer: tortillas (tear to fit), half the chicken mixture, 1/2 cup cheese, more sauce. Repeat. Top with remaining tortillas, remaining sauce, and remaining cheese.
-
Cover with foil and bake 20 minutes. Remove foil and bake 10 more minutes until cheese is bubbly and edges are crispy.
-
Let rest 5 minutes before slicing. Top with cilantro and green onions.
