The Game Plan

  1. Preheat oven to 325°F (160°C).

  2. Pulse onion and garlic in a food processor until very finely minced — almost a paste.

  3. Add ground lamb, ground beef, oregano, cumin, coriander, rosemary, salt, and pepper to the food processor. Process for about 1 minute until the mixture is very smooth and sticky — this is what gives gyro meat its dense texture.

  4. Pack the mixture tightly into a loaf pan, pressing out all air pockets. Cover tightly with foil.

  5. Place the loaf pan inside a larger baking dish. Fill the outer dish with boiling water halfway up the sides of the loaf pan (water bath).

  6. Bake 45 minutes until internal temperature reaches 165°F.

  7. Remove from oven, drain any fat, and let rest 15 minutes. Refrigerate at least 1 hour (overnight is better) — the loaf firms up for slicing.

  8. Slice the loaf as thin as possible. Sear slices in a hot skillet with a little oil until crispy on the edges.
