The Game Plan

  1. Preheat oven to 400F. Line two baking sheets with parchment paper.

  2. Heat olive oil in a skillet over medium heat. Cook the sausage, breaking it into crumbles, until browned (about 5 minutes). Add diced peppers and onion, cooking 3-4 minutes more until softened. Drain any excess grease.

  3. Divide the dough into 6 equal pieces. Roll each piece into a roughly 7-inch oval on a floured surface.

  4. On one half of each oval, layer pepperoni, the sausage-pepper-onion mixture, mozzarella, and a spoonful of marinara. Sprinkle with Italian seasoning and garlic powder.

  5. Fold the other half of the dough over the filling. Crimp the edges with a fork to seal. Cut 2-3 small slits on top for steam.

  6. Place calzones on the baking sheets. Brush tops with beaten egg and sprinkle with flaky salt.

  7. Bake for 22-25 minutes until the crust is golden brown and puffed.

  8. Let cool for 5 minutes (the filling is lava). Serve with warm marinara for dipping.
