Breakfast Burritos
"A freezer full of these is basically a cheat code for mornings. Grab, nuke, conquer the day."
The Game Plan

Heat a large skillet over medium-high heat. Cook crumbled sausage, breaking it into small pieces, until browned and cooked through — about 7 minutes. Transfer to a bowl.

In the same skillet (drain excess grease if needed), add a drizzle of oil. Sauté diced bell peppers for 3 minutes until slightly softened.

Whisk eggs with salt, pepper, and garlic powder. Pour into the skillet with the peppers. Scramble over medium heat until just set — keep them slightly soft since they'll get reheated later.

Combine scrambled eggs, cooked sausage, and cheese in a large bowl. Toss gently.

Warm tortillas in the microwave for 15 seconds each (makes them pliable and less likely to tear).

Scoop about 1/2 cup of filling onto each tortilla. Fold in the sides, then roll up tightly from the bottom.

Wrap each burrito individually in aluminum foil.

Eat now, or freeze the foil-wrapped burritos in a gallon freezer bag.
