Classic Chicken Noodle Soup
"The soup your grandma would make if she had a Costco membership and a busy schedule."
The Game Plan

Heat olive oil in a large pot or Dutch oven over medium heat. Add onion, carrots, and celery. Cook for 5 minutes until the vegetables start to soften.

Add garlic, thyme, and rosemary. Stir for 30 seconds until fragrant.

Pour in the chicken broth. Add bay leaves, salt, and pepper. Bring to a boil.

Add egg noodles and cook for 8-10 minutes until the noodles are tender.

Stir in the shredded rotisserie chicken and cook 2-3 minutes more until heated through.

Remove bay leaves. Stir in fresh parsley and a squeeze of lemon juice if using. Taste and adjust seasoning.

Ladle into bowls and serve with crusty bread, because that's the law.
