Bibigo Dumpling Stir-Fry
"Costco's beloved Bibigo dumplings, pan-fried until crispy and tossed with vegetables in a soy-sesame sauce — a 15-minute weeknight dinner that feels like cheating."
The Game Plan
-
**Make the sauce:** In a small bowl, whisk together the soy sauce, sesame oil, rice vinegar, honey, and sriracha. Set aside.
-
Heat 1 tbsp oil in a large nonstick skillet or wok over medium-high heat. Add the frozen dumplings in a single layer (work in batches if needed). Cook undisturbed for 3–4 minutes until the bottoms are golden and crispy.
-
Flip the dumplings and cook for 2 more minutes. Remove from the pan and set aside.
-
Add the remaining 1 tbsp oil to the same pan. Toss in the frozen stir-fry vegetables and cook for 3–4 minutes until heated through and starting to char slightly. Add the garlic and ginger and stir for 30 seconds.
-
Pour the sauce over the vegetables. Add the cornstarch slurry and stir until the sauce thickens and coats everything, about 1 minute.
-
Return the dumplings to the pan and gently toss to coat in the sauce. Cook for 1 more minute to bring everything together.
-
Serve immediately, garnished with sliced green onions and a sprinkle of sesame seeds. Eat straight from the pan or serve over steamed rice.
