Miso-Glazed Salmon
"Sweet, salty, umami-bomb salmon that caramelizes under the broiler like it went to culinary school."
The Game Plan
-
Whisk together miso paste, mirin, soy sauce, rice vinegar, brown sugar, and sesame oil until smooth.
-
Pat salmon fillets dry. Place in a shallow dish and spoon the miso glaze over each fillet, coating the top and sides.
-
If you have time, cover and marinate in the fridge for 30 minutes (or up to 4 hours). If not, proceed — it's still excellent.
-
Set oven to broil. Line a sheet pan with foil and lightly oil it.
-
Place salmon skin-side down on the pan. Broil 6 inches from the element for 8–12 minutes, until the glaze is bubbly and deeply caramelized and the fish flakes easily.
-
While salmon broils, steam broccoli and cook rice.
-
Plate salmon over rice with broccoli alongside. Garnish with sesame seeds and green onions.
