Chicken Caesar Salad

"The deli's caesar salad kit is $10 and feeds four. This version is crunchier (homemade croutons), cheesier, and the dressing actually tastes like something."

The Game Plan

  1. **Croutons:** Toss bread cubes with olive oil, garlic powder, salt, and pepper. Spread on a baking sheet and bake at 375°F for 10-12 minutes until golden and crunchy.

  2. **Chicken:** Season breasts with salt, pepper, and a drizzle of olive oil. Grill or pan-sear over medium-high heat, 5-6 minutes per side until cooked through. Let rest 5 minutes, then slice.

  3. **Dressing:** Mash anchovy and garlic together into a paste. Whisk in Dijon, lemon juice, Worcestershire, and mayonnaise. Slowly drizzle in olive oil while whisking. Stir in 1/4 cup Parmesan. Season with salt and pepper.

  4. Chop romaine into bite-sized pieces. Toss with dressing, then top with sliced chicken, croutons, and remaining Parmesan.
