Chicken Marsala

The Game Plan

Slice chicken breasts in half horizontally to make thin cutlets. Season with salt and pepper, then dredge lightly in flour, shaking off excess.

Heat olive oil and 1 tablespoon butter in a large skillet over medium-high heat. Sear chicken cutlets 3-4 minutes per side until golden and cooked through. Remove and set aside.

In the same skillet, add another tablespoon of butter. Sauté mushrooms for 5-6 minutes until golden brown. Add garlic and cook 30 seconds.

Pour in Marsala wine and chicken broth. Scrape up any browned bits from the bottom. Let it simmer for 3-4 minutes until reduced by about a third.

Stir in heavy cream and remaining 2 tablespoons butter. Simmer for 2 minutes until the sauce thickens slightly.

Return chicken to the skillet and spoon sauce over the top. Cook 1-2 minutes to warm through.
