Char Siu (BBQ Pork)

The Game Plan

Cut pork shoulder into 2-3 long strips, about 2 inches thick. This maximizes the surface area for caramelization.

Mix all marinade ingredients. Reserve 1/4 cup for the glaze. Add pork to the remaining marinade, toss to coat. Cover and refrigerate at least 4 hours, overnight is best.

Preheat oven to 425°F (220°C). Line a baking sheet with foil and set a wire rack on top.

Place pork strips on the rack. Roast 15 minutes.

Mix reserved marinade with 2 tablespoons honey for the glaze.

Flip pork, brush with glaze. Roast 10 minutes. Flip and glaze again. Roast a final 10-15 minutes until caramelized and slightly charred on the edges. Internal temperature should be at least 145°F.

Let rest 10 minutes. Slice thin against the grain.
