The Game Plan

Cut chicken thighs into large bite-sized pieces (about 1.5 inches).

Combine all marinade ingredients in a bowl. Add chicken and toss to coat. Marinate at least 30 minutes (up to overnight in the fridge).

Heat oil to 340°F (170°C) in a deep pot.

Remove chicken from marinade and toss in potato starch until evenly coated. Shake off excess.

Fry in batches for 4-5 minutes until golden brown and cooked through. Don't crowd the pot.

Drain on a wire rack. Let rest 2 minutes.

Serve over shredded cabbage with lemon wedges and Kewpie mayo.
