"Japanese fried chicken — marinated in soy, ginger, and garlic, coated in potato starch, and fried until shatteringly crispy. Costco Japan sells this in their deli and it flies off the shelf. Now it flies off your plate."

The Game Plan

  1. Cut chicken thighs into large bite-sized pieces (about 1.5 inches).

  2. Combine all marinade ingredients in a bowl. Add chicken and toss to coat. Marinate at least 30 minutes (up to overnight in the fridge).

  3. Heat oil to 340°F (170°C) in a deep pot.

  4. Remove chicken from marinade and toss in potato starch until evenly coated. Shake off excess.

  5. Fry in batches for 4-5 minutes until golden brown and cooked through. Don't crowd the pot.

  6. Drain on a wire rack. Let rest 2 minutes.

  7. Serve over shredded cabbage with lemon wedges and Kewpie mayo.
