The Game Plan

Cut chicken thighs into large bite-sized pieces (about 2 inches).

Mix flour, cornstarch, salt, pepper, and garlic powder. Add cold water and stir until you have a thin batter — some lumps are fine.

Heat oil to 325°F (160°C) in a deep pot or Dutch oven. Dip chicken in batter, let excess drip off, and fry in batches for 6-7 minutes until cooked through but only lightly golden. Remove and drain on a wire rack. Let rest 5 minutes.

**Second fry:** Raise oil to 375°F (190°C). Fry chicken again for 2-3 minutes until deeply golden and super crispy. Drain on a wire rack.

**Sauce:** Combine all sauce ingredients in a small saucepan. Simmer 3-4 minutes until slightly thickened.

Toss hot chicken in the sauce, or serve sauce on the side for dipping. Garnish with sesame seeds and green onions.
