Baby Back Ribs
"Fall-off-the-bone Costco ribs that'll make your neighbors mysteriously appear in your backyard."
The Game Plan

Remove the membrane from the back of each rack — slide a butter knife under it, grab with a paper towel, and peel off.

Mix brown sugar, paprika, garlic powder, cumin, chili powder, onion powder, salt, and pepper in a bowl.

Pat ribs dry. Rub the spice mixture generously over both sides of each rack.

Preheat oven to 275°F. Wrap each rack tightly in heavy-duty aluminum foil, bone-side up.

Place foil packets on a sheet pan. Bake for 2.5 hours.

Unwrap ribs carefully (watch the steam). Brush generously with BBQ sauce.

Switch oven to broil. Broil ribs 3–5 minutes until the sauce is bubbly and caramelized. Watch closely — it goes from perfect to charred fast.

Set up your grill for indirect heat — burners on one side only, ribs on the other. Target 275°F.

Place ribs bone-side down on the cool side. Close the lid and cook for 2.5 hours, maintaining temperature.

Brush with BBQ sauce and move briefly over direct heat for 2–3 minutes per side to get that sticky char.
