Berry Protein Pancakes
"Fluffy, protein-packed pancakes that taste like a treat but won't put you back to sleep by 10 AM."
The Game Plan
-
Mix Kodiak pancake mix, milk, eggs, Greek yogurt, vanilla, and cinnamon in a large bowl. Stir until just combined — lumps are fine and actually preferred. Overmixing makes tough pancakes.
-
Gently fold in frozen berries. No need to thaw them first; they'll warm through while cooking and create little jammy pockets.
-
Heat a griddle or large nonstick skillet over medium heat. Add a small pat of butter.
-
Pour about 1/3 cup batter per pancake. Cook until bubbles form on the surface and the edges look set — about 2–3 minutes.
-
Flip and cook 1–2 minutes more until golden brown and cooked through.
-
Serve stacked with extra berries, a dollop of Greek yogurt, and maple syrup.
