The Game Plan

  1. Mix Kodiak pancake mix, milk, eggs, Greek yogurt, vanilla, and cinnamon in a large bowl. Stir until just combined — lumps are fine and actually preferred. Overmixing makes tough pancakes.

  2. Gently fold in frozen berries. No need to thaw them first; they'll warm through while cooking and create little jammy pockets.

  3. Heat a griddle or large nonstick skillet over medium heat. Add a small pat of butter.

  4. Pour about 1/3 cup batter per pancake. Cook until bubbles form on the surface and the edges look set — about 2–3 minutes.

  5. Flip and cook 1–2 minutes more until golden brown and cooked through.

  6. Serve stacked with extra berries, a dollop of Greek yogurt, and maple syrup.
