Chicken Alfredo Pasta
"A weeknight cheat code — Costco rotisserie chicken and Kirkland alfredo sauce turn penne and broccoli into a creamy, satisfying dinner with almost no real cooking."
The Game Plan
-
Bring a large pot of salted water to a boil. Cook penne according to package directions, about 10 minutes. Add frozen broccoli florets to the pot during the last 3 minutes of cooking. Reserve 1/2 cup pasta water, then drain.
-
While pasta cooks, shred the rotisserie chicken into bite-sized pieces. You'll need about 3 cups of shredded meat — save the rest for another meal.
-
Return the pot to medium heat. Pour in the alfredo sauce and stir in garlic powder and pepper. Warm until just simmering.
-
Add the drained pasta, broccoli, and shredded chicken. Toss everything together, adding splashes of pasta water until the sauce coats the pasta nicely.
-
Serve in bowls topped with Parmesan and red pepper flakes if you like.
