Garlic Butter Steak Bites

Preheat oven to 425°F (220°C). Toss potato cubes with olive oil, salt, and smoked paprika on a sheet pan. Roast for 20 minutes, flipping halfway, until golden and crispy.

While potatoes roast, pat steak cubes dry with paper towels and season generously with salt and pepper.

Heat a large cast-iron or heavy skillet over high heat. Add 1 tablespoon butter and sear steak bites in a single layer, about 2 minutes per side for medium. Work in batches to avoid crowding the pan.

Reduce heat to medium. Add remaining 2 tablespoons butter, minced garlic, and thyme to the skillet. Baste the steak bites with the melted garlic butter for about 1 minute until fragrant.

Plate the steak bites over roasted potatoes. Spoon any remaining garlic butter from the pan on top and finish with chopped parsley.
