Honey Garlic Chicken Thighs

Start your rice according to package directions.

Pat the chicken thighs dry with paper towels. Season both sides generously with salt and pepper.

Heat olive oil in a large skillet over medium-high heat. Once the oil is shimmering, add the chicken thighs in a single layer — don't crowd the pan. Work in batches if needed.

Sear undisturbed for 5-6 minutes until the bottom is deep golden brown. Flip and cook another 5-6 minutes until cooked through (165°F internal).

Remove chicken to a plate and tent with foil.

Lower heat to medium. In the same skillet, add the garlic and cook for 30 seconds until fragrant.

Add the honey, soy sauce, rice vinegar, and sriracha. Stir and let it bubble for 1 minute.

Stir in the cornstarch slurry. Simmer 30 seconds until the sauce thickens and turns glossy.

Return the chicken to the pan and flip to coat both sides in the sauce.

Serve over rice with the extra sauce spooned on top.
