Sheet Pan Chicken Fajitas

Preheat oven to 425F. Line a large sheet pan with foil or parchment paper.

Slice chicken thighs into thin strips. Slice bell peppers and onion into similar-sized strips.

Toss chicken, peppers, and onion on the sheet pan with olive oil, cumin, chili powder, garlic powder, smoked paprika, salt, and pepper. Spread in a single layer (use two pans if needed — crowding is the enemy of crispy edges).

Roast for 20 minutes, tossing halfway through, until chicken is cooked through and vegetables have some nice charred spots.

Squeeze fresh lime juice over everything. Serve in warm tortillas with your favorite toppings.
