The Game Plan

  1. Melt butter in a large pot over medium heat. Add onion and cook 4-5 minutes until softened. Add garlic and cook 1 minute.

  2. Sprinkle flour over the onions and stir constantly for 2 minutes to make a roux.

  3. Slowly whisk in chicken broth and milk, stirring to prevent lumps. Bring to a simmer.

  4. Add broccoli florets, mustard powder, and nutmeg. Simmer 12-15 minutes until broccoli is very tender.

  5. Use an immersion blender to blend about half the soup (leave it chunky). Or transfer half to a blender, blend smooth, and return to the pot.

  6. Stir in heavy cream and cheddar cheese. Stir until cheese is fully melted and smooth. Season with salt and pepper.
