The Game Plan

  1. Preheat oven to 400°F (200°C). Scrub potatoes, prick all over with a fork, and rub with a little olive oil and salt.

  2. Place directly on the oven rack and bake 50-60 minutes until a knife slides in easily.

  3. While potatoes bake, cook bacon until crispy. Crumble or chop into bits.

  4. When potatoes are done, slice the top open lengthwise. Squeeze the sides to fluff up the inside.

  5. Add a pat of butter to each potato, then load with cheddar, bacon bits, a dollop of sour cream, and green onions.

  6. Return to oven for 5 minutes if you want the cheese fully melted.

Scoop out the insides and make loaded mashed potatoes

Dice leftover baked potato and fry in a skillet for home fries

Chop and add to a breakfast burrito
