Egg Rolls

The Game Plan

Cook ground pork in a large skillet over medium-high heat, breaking it up, until no longer pink. Drain excess fat.

Add cabbage, carrots, garlic, and ginger. Stir-fry 3-4 minutes until vegetables are wilted but still have some crunch.

Add soy sauce, rice vinegar, sesame oil, and sugar. Toss to combine. Transfer to a bowl and let cool 10 minutes (hot filling = soggy wrappers).

Place a wrapper on a clean surface, rotated so it looks like a diamond. Put 2-3 tablespoons of filling in the center. Fold the bottom corner up, fold in the sides, then roll tightly toward the top corner. Seal the edge with a dab of water.

Heat oil to 350°F (175°C) in a deep pot or Dutch oven. Fry egg rolls 3-4 at a time for 2-3 minutes, turning once, until deep golden brown.

Drain on a wire rack and serve hot with sweet chili or duck sauce.
