The Game Plan

  1. Cook rice according to package directions. Let cool slightly — you want warm, not hot.

  2. Cut tuna into 1/2-inch cubes. Gently toss with soy sauce, sesame oil, rice vinegar, and sriracha. Let marinate while you prep everything else (at least 10 minutes).

  3. Slice avocados, dice cucumber, and prep all toppings.

  4. Divide rice among 4 bowls. Arrange marinated tuna, avocado, edamame, cucumber, and pickled ginger on top.

  5. Drizzle with sriracha mayo, sprinkle with sesame seeds, and top with nori strips and green onion.
