The Game Plan

  1. Season chicken breasts with salt and pepper. Poach in simmering water for 15 minutes until cooked through, or use leftover rotisserie chicken. Shred with two forks.

  2. Whisk together all dressing ingredients until well combined.

  3. In a large bowl, toss shredded napa cabbage, red cabbage, carrots, green onions, and cilantro.

  4. Add shredded chicken and almonds. Pour dressing over the salad and toss to coat.

  5. Top with crispy wonton strips right before serving.
