The Game Plan

Peel potatoes and cut into roughly 1-inch chunks — keep them uniform so they cook evenly.

Place potatoes in a large pot and cover with cold, salted water by about an inch.

Bring to a boil over high heat, then reduce to a steady simmer. Cook 15-20 minutes until a fork slides through with zero resistance.

While potatoes simmer, warm the heavy cream and butter together in a small saucepan over low heat until the butter melts. If using garlic, sauté it in the butter for 1 minute before adding the cream.

Drain potatoes thoroughly and return them to the hot pot. Let them sit for 1-2 minutes to steam off excess moisture — this is the secret to non-gluey mash.

Mash with a potato masher or ricer. Pour in the warm cream-butter mixture and stir gently until smooth and creamy. Season with salt and pepper.
