The Game Plan

  1. Melt butter in a large pot over medium heat. Cook onion 5 minutes until softened. Add garlic and cook 1 minute.

  2. Stir in tomato paste and cook 2 minutes until it darkens slightly.

  3. Add both cans of diced tomatoes (with juice), broth, sugar, and red pepper flakes. Bring to a simmer and cook 20 minutes.

  4. Add basil leaves. Use an immersion blender to puree until completely smooth. (Or blend in batches in a regular blender — vent the lid.)

  5. Stir in heavy cream. Season with salt and pepper. Heat through for 2 minutes.

  6. Serve garnished with fresh basil and a swirl of cream.
