Cochinita Pibil

The Game Plan

  1. Blend achiote paste, orange juice, lime juice, vinegar, garlic, cumin, cinnamon, salt, and pepper until smooth.

  2. Cut pork into 3-4 large chunks. Coat thoroughly in the achiote marinade. Cover and refrigerate at least 2 hours, overnight is ideal.

  3. Preheat oven to 325°F (160°C). If using banana leaves, line a Dutch oven or deep baking dish with them (pass them over a flame or in the microwave for 10 seconds to make them pliable). Place pork and all marinade on the leaves. Fold the leaves over to wrap. Cover tightly with a lid or foil. (If no banana leaves, just cover tightly with foil.)

  4. Roast 3-3.5 hours until the pork is fall-apart tender and shreds easily with a fork.

  5. Shred the pork and mix with the cooking juices.

  6. Serve on warm tortillas with pickled red onions and habanero salsa.
