French Onion Soup

The Game Plan

Slice all onions into thin half-moons. This is the boring part. It's worth it.

Melt butter with olive oil in a large Dutch oven over medium heat. Add onions and sugar, stir to coat. Cook 40-45 minutes, stirring every 5 minutes, until deeply golden brown and jammy. Don't rush this — low and slow is the whole point.

Add garlic and flour, stir for 1 minute. Pour in wine and scrape up the browned bits.

Add beef broth, bay leaves, and thyme. Simmer 15 minutes. Season with salt and pepper. Discard bay leaves and thyme stems.

Ladle soup into oven-safe bowls. Float a slice of bread on each. Pile shredded Gruyere on top.

Broil 3-5 minutes until cheese is bubbly, golden, and draping over the sides of the bowl.
