The Game Plan

  1. Cook rice according to package directions.

  2. In a wide skillet, combine dashi, soy sauce, mirin, sake, sugar, and ginger slices. Bring to a simmer.

  3. Add sliced onion. Cook 5 minutes until onion is soft and translucent.

  4. Add beef slices in a single layer (work in batches if needed). Simmer 3-4 minutes until just cooked through — don't overcook or the beef gets tough.

  5. Crack an egg into each serving bowl of rice (raw or poach it in the simmering broth for 2 minutes for a soft egg). Spoon beef and onion with plenty of broth over the rice.

  6. Garnish with pickled ginger and shichimi togarashi.
