Gyudon
"A simmered beef bowl that takes 20 minutes and tastes like you ordered it at Yoshinoya. Costco Japan sells gyudon kits in the deli — make it from scratch with thinly sliced Costco beef and you'll never look back."

The Game Plan
-
Cook rice according to package directions.
-
In a wide skillet, combine dashi, soy sauce, mirin, sake, sugar, and ginger slices. Bring to a simmer.
-
Add sliced onion. Cook 5 minutes until onion is soft and translucent.
-
Add beef slices in a single layer (work in batches if needed). Simmer 3-4 minutes until just cooked through — don't overcook or the beef gets tough.
-
Crack an egg into each serving bowl of rice (raw or poach it in the simmering broth for 2 minutes for a soft egg). Spoon beef and onion with plenty of broth over the rice.
-
Garnish with pickled ginger and shichimi togarashi.
