The Game Plan

Cut pork belly into 1-inch cubes — don't trim the fat, that's the whole point. Blanch in boiling water for 2 minutes to remove impurities, then drain.

Heat a large Dutch oven or heavy pot over medium heat. Add pork belly pieces fat-side down and render until golden, about 5 minutes. You won't need extra oil — the belly brings its own.

Add fried shallots, garlic, and ginger. Stir for 1 minute until fragrant.

Add soy sauce, dark soy sauce, Shaoxing wine, brown sugar, five-spice powder, and water. Stir to combine.

Bring to a boil, then drop to a low simmer. Cover and braise for 1 hour, stirring occasionally.

Peel hard-boiled eggs and nestle them into the braising liquid. Continue simmering uncovered for 30 minutes until the sauce thickens and the pork is melt-in-your-mouth tender.

Serve over steamed white rice. Halve the eggs and place on top. Spoon extra sauce generously over everything and finish with a handful of fried shallots.
