Quiche Lorraine
"Big, custardy, loaded with bacon and Gruyere — the kind of quiche that makes brunch feel like an event. Feeds 8, mostly because nobody can stop at one slice."

The Game Plan
-
Preheat oven to 375°F (190°C). Place pie crust in a 9-inch deep-dish pie plate. Prick the bottom with a fork. Blind bake with pie weights or dried beans for 10 minutes. Remove weights and bake 5 more minutes until lightly golden.
-
Cook bacon until crispy. Crumble into pieces.
-
Whisk together eggs, heavy cream, milk, nutmeg, salt, and pepper until smooth.
-
Scatter bacon and cheese across the bottom of the par-baked crust.
-
Pour egg mixture over the top. It should come nearly to the top of the crust.
-
Bake 35-40 minutes until the center is just set — it should jiggle slightly like Jell-O when you tap the pan. It will firm up as it cools.
-
Let rest 10 minutes before slicing. Sprinkle with chives.
