The Game Plan

  1. Cut chicken into bite-sized pieces. Season with salt and pepper.

  2. Heat oil in a large pot over medium-high heat. Brown chicken pieces for 3-4 minutes. Remove and set aside.

  3. In the same pot, cook onion 5 minutes until softened and starting to caramelize. Add carrots and potatoes, stir for 2 minutes.

  4. Add water, soy sauce, and chicken. Bring to a boil, then reduce to a simmer. Cook 20 minutes until potatoes and carrots are tender.

  5. Turn off heat. Break curry roux into pieces and stir into the pot until fully dissolved. Add honey if using.

  6. Return to low heat and simmer 5 more minutes, stirring often, until sauce is thick and glossy.

  7. Serve over rice with fukujinzuke on the side.
