The Game Plan

Bring a pot of water to a boil. Gently lower 6 eggs in and boil for exactly 6.5 minutes for a jammy yolk (7 minutes if you want fully set). Transfer to an ice bath immediately and let cool completely. Peel carefully.

Mix sausage meat (or ground pork) with sage, thyme, nutmeg, salt, pepper, and garlic powder. Divide into 6 equal portions (about 4 oz each).

Flatten each sausage portion into a thin patty in your palm. Place a peeled egg in the center and wrap the meat around it, pressing to seal with no gaps. Wet your hands if the meat sticks.

Set up a breading station: flour in one bowl, beaten eggs in another, panko in a third. Roll each wrapped egg in flour, dip in egg wash, then coat thoroughly in panko. Press the crumbs on firmly.

Heat oil to 350°F (175°C) in a deep pot or Dutch oven. Fry eggs in batches of 2-3 for about 5-6 minutes, turning occasionally, until deep golden brown all over. Drain on a wire rack.

Let rest 2-3 minutes before cutting in half. Serve with English mustard or HP sauce.
