The Game Plan

  1. Shred the rotisserie chicken, discarding skin and bones. You should get about 3 cups of shredded meat.

  2. Open the Caesar salad kit. Toss the lettuce with the dressing packet and croutons in a large bowl. Add the shredded chicken and Parmesan. Toss everything together.

  3. Warm the tortillas in the microwave for 15-20 seconds so they're pliable and easy to roll.

  4. Spoon the chicken Caesar mixture down the center of each tortilla. Fold the bottom edge up, then roll tightly from one side to the other, burrito-style.

  5. Slice each wrap in half on a diagonal. Serve immediately.

The Day 2 Evolution

Skip the tortilla and serve it as a regular chicken Caesar salad

Chop up leftover chicken and toss with Caesar dressing for a chicken Caesar pasta salad

Use remaining tortillas for quesadillas or breakfast burritos
