Chicken Quesadillas

The Game Plan

  1. Shred the rotisserie chicken, discarding skin and bones. You need about 3 cups total.

  2. Heat a large skillet or griddle over medium heat. Add a small pat of butter or a spray of cooking spray.

  3. Lay a flour tortilla flat in the skillet. Spread about 1/3 cup of shredded cheese on one half, then top with about 1/2 cup of shredded chicken. Add another 1/3 cup of cheese on top of the chicken.

  4. Fold the tortilla in half and press gently with a spatula.

  5. Cook 2-3 minutes per side until the tortilla is golden brown and the cheese is fully melted.

  6. Slide onto a cutting board, let rest 30 seconds, then cut into thirds.

  7. Repeat with remaining tortillas. Serve with salsa and sour cream.
