Hummus & Veggie Cups

The Game Plan

Wash all your vegetables. Yes, even the ones that say "pre-washed." Trust issues are healthy sometimes.

Slice the bell peppers in half, remove seeds and membranes, then cut into strips about the width of your finger.

Cut the cucumber in half lengthwise, then into quarters, then into 3-inch sticks.

Leave cherry tomatoes whole for easy dipping, or halve them if you prefer.

Trim the baby carrots if any look particularly chunky. Most are fine as-is.

Spoon about 3 tablespoons of hummus into each small cup, ramekin, or the bottom of a wide-mouth mason jar.

Drizzle a little olive oil over each portion of hummus and dust with smoked paprika or everything bagel seasoning. This takes 10 seconds and makes it look like you have your life together.

Arrange veggie sticks around the hummus for easy dipping.

If you're meal prepping, pack veggies on top of the hummus in the jar — they stay above the hummus and don't get soggy.

Toss in a handful of pita chips or crackers on the side for variety.

For a fancier presentation, arrange everything on a big platter with the hummus bowl in the center. Add some olives, pickled peppers, or feta chunks if you want to go full mezze.
