The Game Plan

  1. Place the sliced onion in an even layer on the bottom of the slow cooker. This is your roast's little bed — treat it right.

  2. Set the chuck roast on top of the onions.

  3. Pour beef broth over the roast, then add Worcestershire sauce, garlic, Italian seasoning, thyme, salt, and pepper.

  4. Cover and cook on LOW for 8 hours, until the beef is fall-apart tender and practically shreds itself.

  5. Remove the roast and shred with two forks. It should put up absolutely no resistance.

  6. Return the shredded beef to the slow cooker and stir it into the cooking liquid. Let it soak for a few minutes — this is where the magic happens.

  7. Scoop shredded beef onto hoagie rolls and top each with a slice of provolone.

  8. Broil open-faced in the oven for 1-2 minutes until the cheese is melted and bubbly.

  9. Ladle the remaining cooking liquid through a fine mesh strainer into small bowls for dipping — that's your au jus, and it's liquid gold.
